Chicken Risotto With Crispy Bacon Ingredients
- 2 chicken breasts cut into bite size pieces
- A pack of chestnut mushrooms – quartered
- 1 Litre chicken stock – home made
- 50g butter – diced, cold
- 1 white onion – diced
- 2 sticks celery – diced
- 1 garlic clove – crushed
- 400g risotto rice
- 1 large glass white wine or vermouth
- Teaspoon salt and black pepper to taste
- 4 rashers smoked bacon cut into ribbons
- Chopped basil and basil leaves
- Grated parmesan
Chicken Risotto With Crispy Bacon Method
- You need a frying pan, saucepan and casserole dish
- Fry the mushrooms on a high heat till browned- set aside
- Fry the chicken on high heat to brown – set aside
- Put the stock/ salt pepper in the saucepan and simmer
- Fry the onions, celery and garlic in the casserole dish in olive oil – don’t brown
- After 5 mins, add the rice and stir to coat
- Add the wine and cook out
- Add a ladle of stock and stir to absorb – repeat – about 15 mins
- Meanwhile fry the bacon strips to crisp – when done drain on kitchen paper
- Add the chicken and mushrooms and stir in – test and adjust seasoning
- When ready (it should not be too dry) – add the butter cover with a tea towel
- Portion up adding parmesan, bacon and basil leaves on top
