As part of our Dish It Yourself series with Ground Up Cookery School, here’s a comfort-food classic that gets a seriously tasty upgrade. Think creamy béchamel, smoky lardons and a cheesy trio that bubbles to golden perfection.

Perfect as a side, a main, or an “I deserve this” midweek treat.

Ingredients

  • 1 head broccoli
  • 1 cauliflower
  • Béchamel sauce
  • 200g smoked lardons
  • 25g breadcrumbs
  • 150g grated mozzarella
  • 125g ricotta

Instructions

  • Trim the cauliflower
  • Chop into florets
  • Chop the leaves
  • Chop broccoli trim off the florets
  • Chop the stalk
  • Bacon Lardons into a pan on medium heat until browning and caramelising
  • Boil Broccoli & Cauliflower for 2 minutes
  • Add ricotta to your béchamel
  • Drain cauliflower & broc
  • Add breadcrumbs & stir til browned
  • Cauliflower & broccoli into a baking tray
  • Cover with béchamel sauce
  • Top with layers of bacon mix & mozzarella cheese
  • 200 degree C oven
  • Bake for 20 mins
